J&#8217;ai aussi eu une exp\u00e9rience heureuse avec de la <strong>truite<\/strong>. <br \/>Par ailleurs, les graisses des poissons sont pleines d&#8217;om\u00e9ga 3, qui sont anti-inflammatoires. (Donc, contrairement aux graisses de la viande rouge, il ne faut pas s&#8217;en priver !).<\/p><p>En plus de<strong> sel et de sucre <\/strong>(qui assaisonnent autant qu&#8217;ils aident \u00e0 la conservation), je vous recommande une herbe aromatique incontournable : <strong>l&#8217;aneth fra\u00eeche!<\/strong> <br \/>Elle incarne \u00e0 elle seule l&#8217;essence de la Su\u00e8de (et des pays scandinaves). <br \/>Son parfum l\u00e9g\u00e8rement <strong>anis\u00e9<\/strong> s&#8217;accomode \u00e0 merveille avec des ingr\u00e9dients plus <strong>acides<\/strong> (<strong>vinaigre, jus de citron, saumure de kimchi, pomme, fruits rouges&#8230;<\/strong>).<br \/>Vous pouvez cependant varier les plaisirs avec d&#8217;autres inspirations fra\u00eeches et parfum\u00e9es<strong>: feuilles de fenouil, coriandre fra\u00eeche, basilic, shiso<\/strong>&#8230;.<\/p><p>Autre ingr\u00e9dient incontournable : <strong>les baies roses,<\/strong> au d\u00e9licieux go\u00fbt acidul\u00e9.<\/p><p>Et enfin, pour une recette <em>fusion<\/em> am\u00e9lior\u00e9e : <strong>LE MISO<\/strong> !<\/p><p>Le miso est une p\u00e2te de l\u00e9gumineuse ferment\u00e9e, <strong>aux propri\u00e9t\u00e9s chimiques<\/strong> incroyables !<br \/>Notamment : il apporte <strong>du go\u00fbt et sert de conservateur<\/strong> tout en <strong>attendrissant<\/strong> les aliments \u00e0 base de prot\u00e9ines (viande, poisson, tofu&#8230;).<\/p><p><a href=\"http:\/\/toktoklab.fr\/index.php\/2026\/03\/18\/le-guide-du-miso\/\">Vous pourrez en apprendre plus sur les atouts culinaires du miso, par ici !<\/a><\/p><p>Le miso va permettre au poisson de <strong>bien se conserver<\/strong>, le rendre <strong>plus fondant, et sublimer son go\u00fbt.<\/strong><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-8c663b5 e-con-full e-flex e-con e-parent\" data-id=\"8c663b5\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t<div class=\"elementor-element elementor-element-e3ad6a1 e-con-full e-flex e-con e-child\" data-id=\"e3ad6a1\" data-element_type=\"container\" data-e-type=\"container\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t\t<div class=\"elementor-element elementor-element-0944a04 elementor-widget elementor-widget-heading\" data-id=\"0944a04\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">UNE RECETTE SIMPLE<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-d19885c elementor-widget__width-initial elementor-widget elementor-widget-text-editor\" data-id=\"d19885c\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>J&#8217;aime habituellement peser mes denr\u00e9es au gramme pr\u00e8s, pour avoir la ma\u00eetrise des fermentations, mais dans le cas d&#8217;une marinade comme celle du gravlax, je vous laisse ici exp\u00e9rimenter les dosages selon votre palais !<\/p><p>Comment proc\u00e9der ?<\/p><p><strong>1 \/<\/strong> Prenez <strong>des filets de poissons bien frais<\/strong>. Vous pouvez conserver la peau.<\/p><p><strong>2 \/<\/strong> Enduisez les filets, c\u00f4t\u00e9 chair, d&#8217;une fine couche de <strong>p\u00e2te miso<\/strong>.<\/p><p><strong>3 \/<\/strong> Saupoudrez par dessus un m\u00e9lange de <strong>sucre et de sel<\/strong> (60% de sucre \/ 40% de sel).<\/p><p><strong>4 \/<\/strong> Ajoutez <strong>des baies rouges<\/strong>, ou des \u00e9pices qui vous inspirent (<strong>poivre du sichuan, curcuma, paprika fum\u00e9..<\/strong>.).<\/p><p><strong>5 \/<\/strong> Ajoutez les herbes fra\u00eeches lav\u00e9es et cisel\u00e9es (<strong>aneth, fenouil, coriandre<\/strong>&#8230;).<\/p><p><strong>6 \/<\/strong> Enveloppez les filets dans un film, pour les prot\u00e9ger de l&#8217;air, et laissez poser au moins une nuit au frais. (je laisse les miens mariner jusqu&#8217;\u00e0 3 jours).<\/p><p><strong>7\/<\/strong> Vous pouvez consommer le poisson <strong>d\u00e8s le lendemain<\/strong>, en pr\u00e9levant des fines tranches du filet. <br \/>Il se d\u00e9guste merveilleusement <strong>comme un carpaccio<\/strong>, ou <strong>dans une salade compos\u00e9e<\/strong> avec des feuilles de roquette, de m\u00e2che, des petits d\u00e9s de pomme fra\u00eeche, des quartiers d&#8217;orange ou de pamplemousse.\u00a0<br \/>J&#8217;aime aussi ajouter <strong>un filet de jus de citron, ou du jus de kimchi<\/strong> pour relever le tout, avant de servir !<\/p><p><strong>8 \/<\/strong> Vous n&#8217;avez pas tout consomm\u00e9 ? <strong>Laissez s&#8217;\u00e9goutter le jus<\/strong> qui s&#8217;est form\u00e9 pendant la nuit (le miso, le sucre et le sel auront fait d\u00e9gorger l&#8217;eau contenue dans le poisson, et auront p\u00e9n\u00e9tr\u00e9 les chairs), et <strong>remettez le filet envelopp\u00e9 dans un film et un r\u00e9cipient propre au frigo.<\/strong>\u00a0Il pourra \u00eatre consomm\u00e9 plus tard dans la semaine.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element
