data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Le <strong>miso<\/strong> est un mot japonais qui d\u00e9signe une <strong>p\u00e2te de soja ferment\u00e9e,<\/strong> utilis\u00e9e comme <strong>condiment<\/strong> de la cuisine quotidienne (en soupe, assaisonnement ou moyen de conservation).<br \/>Vraisemblablement introduite au Japon par des moines bouddhistes chinois au VI<sup>e<\/sup> si\u00e8cle, de tr\u00e8s nombreuses vari\u00e9t\u00e9s ont \u00e9t\u00e9 d\u00e9velopp\u00e9es depuis. <br \/>Son origine remonte \u00e0 plusieurs milliers d&#8217;ann\u00e9es, et proviendrait de la <strong>Mandchourie<\/strong>, terre d&#8217;origine du soja, et carrefour longtemps disput\u00e9 des cultures de l&#8217;Est asiatique.<\/p><p>Il existe \u00e9galement des <strong>variantes chinoises et cor\u00e9ennes<\/strong> plus anciennes de <em>miso<\/em>, mais la qualit\u00e9 japonaise est celle qui s&#8217;est le mieux export\u00e9e en occident, sans doute gr\u00e2ce \u00e0 son go\u00fbt plus doux et moins clivant.\u00a0<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element <strong>champignon<\/strong> ! <br \/>Les vari\u00e9t\u00e9s comestibles d&#8217;<i>Aspergillus<\/i> se nourrissent des <strong>prot\u00e9ines<\/strong> et de l&#8217;<strong>amidon<\/strong> pr\u00e9sents dans les c\u00e9r\u00e9ales et dans les l\u00e9gumineuses. <br \/>Cela signifie que le miso peut tr\u00e8s bien \u00eatre produit <strong>\u00e0 partir de d&#8217;autres mati\u00e8res premi\u00e8res que le soja:<\/strong> l&#8217;essentiel est d&#8217;avoir une <strong>combinaison de c\u00e9r\u00e9ales et de l\u00e9gumineuses<\/strong> (pour l&#8217;apport d&#8217;amidon et de prot\u00e9ines).<\/p><p>Bien qu&#8217;il existe en Europe des producteurs de soja bio, je pr\u00e9f\u00e8re varier et explorer d&#8217;autres possibilit\u00e9s de go\u00fbts, offertes par diff\u00e9rentes c\u00e9r\u00e9ales et l\u00e9gumineuses. <br \/>Le r\u00e9sultat est souvent diff\u00e9rent des miso japonais, mais vous offre un voyage culinairetout autour du globe : <br \/><br \/>&#8211; une touche de <strong>miso de haricots rouges<\/strong> dans votre <em>chili con\/sin carne.<\/em><br \/>&#8211; du <strong>miso de lentilles corail<\/strong>, dans votre <em>dahl <em>d\u00e9licieux<\/em> ou <em>savoureux<\/em>, et qui d\u00e9crit un ressenti bien particulier en bouche :\u00a0<br \/>Il s&#8217;agit d&#8217;un <strong>go\u00fbt doux, agr\u00e9able, rond, qui met d\u00e9finitivement en app\u00e9tit<\/strong>.<br \/>Cette sensation fait physiquement saliver d&#8217;envie de manger !<\/p><p><strong>Ce 5\u00e8me go\u00fbt<\/strong> tr\u00e8s agr\u00e9able correspond, <em>en simplifiant,<\/em> \u00e0 la saveurs des acides amin\u00e9es d\u00e9tect\u00e9e par nos papilles (soient les prot\u00e9ines animales et v\u00e9g\u00e9tales).<\/p><p>Or, <strong>des acides amin\u00e9s, le miso en contient beaucoup !<\/strong><\/p><p>Lors de la fermentation de la p\u00e2te miso, <strong>les prot\u00e9ines v\u00e9g\u00e9tales et l&#8217;amidon<\/strong> sont d\u00e9compos\u00e9s en <strong>acides amin\u00e9s<\/strong> et en <strong>sucres simples<\/strong>. <br \/>Cette \u00e9tape dure de plusieurs mois \u00e0 plusieurs ann\u00e9es, et permet de cr\u00e9er ce go\u00fbt si intense et savoureux du miso.<\/p><p><em>Le saviez-vous ? Le terme <strong>umami<\/strong> a bien une \u00e9quivalence en fran\u00e7ais, invent\u00e9e au XVIIIe si\u00e8cle, et pass\u00e9 de mode aujourd&#8217;hui. Ce taux \u00e9lev\u00e9 permet \u00e0 la p\u00e2te de se conserver et de m\u00e2turer tr\u00e8s longtemps, \u00e0 temp\u00e9rature ambiante\/fra\u00eeche.<\/p><p>Le miso est donc un produit concentr\u00e9 en sel, <strong>\u00e0 utiliser dilu\u00e9<\/strong> et \u00e0 petite dose, comme lorsqu&#8217;on utilise de la moutarde, ou du bouillon concentr\u00e9 en poudre : <strong>quand vous utilisez du miso dans une recette, n&#8217;ajoutez pas de sel suppl\u00e9mentaire.<\/strong><\/p><p><strong>Les miso TOK TOK sont volontairement peu sal\u00e9s<\/strong> (4 \u00e0 6%), afin de ne pas saturer vos papilles et organismes de sel.<br \/>Je pr\u00e9f\u00e8re que vous sentiez <strong>la puissance de l&#8217;umami et le go\u00fbt des l\u00e9gumineuses<\/strong> employ\u00e9es, sans devoir peser la quantit\u00e9 de miso que vous utilisez dans vos recettes !<\/p><p>Mais cette d\u00e9cision a un prix : celui de <strong>la temp\u00e9rature de conservation.<\/strong><br \/>Le faible taux de sel assure un contr\u00f4le limit\u00e9 de l&#8217;activit\u00e9 microbienne.<br \/>Ainsi, hors du frigo, il peut arriver que votre miso produise du gaz <strong>via l&#8217;activit\u00e9 des bact\u00e9ries lactiques<\/strong> naturellement pr\u00e9sentes dans la fermentation.<\/p><p>Votre sachet peut alors gonfler (photo ci-dessous), et le miso s&#8217;acidifier, \u00e0 cause de l&#8217;activit\u00e9 des bact\u00e9ries qui consomment les sucres et rel\u00e2chent de l&#8217;acide lactique, en plus du CO2&#8230; Les enzymes vont d\u00e9composer les prot\u00e9ines du tofu, <strong>jusqu&#8217;\u00e0 transformer celui-ci en p\u00e2te \u00e0 tartiner !<\/strong> (le tofu manque de fibres pour garder sa forme consommation<\/em>) <strong>n&#8217;implique pas de risques pour votre sant\u00e9.<\/strong><br \/>Elle indique en revanche la date \u00e0 partir de laquelle votre miso peut perdre certaines qualit\u00e9s sp\u00e9ficiques (go\u00fbts, couleurs&#8230;).<\/p><p>Si votre sachet est gonfl\u00e9, mais que vous ne voyez pas de mousse multicolores en surface, ne jetez pas n\u00e9cessairement son contenu imm\u00e9diatement.<\/p><p>Mon conseil est de <strong>sentir le miso:<\/strong> si l&#8217;odeur n&#8217;est pas franchement repoussante, go\u00fbtez un petit \u00e9chantillon pour \u00e9valuer l&#8217;\u00e9volution de son go\u00fbt.<\/p><p><strong>Fiez-vous \u00e0 vos sens (vue, odorat et go\u00fbt!) avant de d\u00e9cider de jeter ou non votre miso.<br \/><\/strong><br \/>Les produits ferment\u00e9s sont vivants, et <strong>\u00e9voluent dans le temps<\/strong>, contrairement aux produits industriels ultra-transform\u00e9s.<\/p><p>Nous avons perdu l&#8217;habitude de consommer des produits dont les go\u00fbts et aspects changent dans le temps, mais dans le cas de nombreux produits ferment\u00e9s, <strong>les microorganismes pr\u00e9sents d\u00e8s la fabrication assurent la qualit\u00e9 sanitaire du produit<\/strong>, et le font \u00e9voluer tant qu&#8217;ils restent en vie (en absence de pasteurisation).<\/p><p>Kimchi, kombucha, k\u00e9fir, et fromages
